Libya Food Guide

The staple in Libya is the ubiquitous North African one – couscous – accompanied by meat or vegetable based dishes. The meats that most people prefer are lamb, chicken and camel. Italian-style pasta dishes, especially with macaroni are also widely available. Bazim, a hard paste made from barley, salt and water is popular with locals. Fish cooked on the coast in the local style is also very good. In the Sahara, a local specialty is f’taat, a delicious layered buckwheat pancake of meat and sauces. Libyan soup – sherba – accompanies every meal and is a very spicy minestrone soup with lamb and macaroni. Coffee is served in both espresso and Arabic styles and is almost always very good. Tea is usually very sweet and milky. Drinking is strictly prohibited, and there is no alcohol on sale anywhere in Libya.
