Haryana Food Guide

A cattle-rich state, Haryana has plenty of milk and milk products on its menu. Curd and “lassi” (a curd drink) are consumed everyday. The people of this state eat lots of lentils, especially “rajma” (kidney beans) with rice and wheat. Essentially a vegetarian people, their meals are simple and the staple is wheat rather than rice. “Khichri” (literally meaning hotch potch) is delicious and simply made of bajra and moong or rice. The state is no longer “dry” and booze is hugely consumed, be it hooch or expensive foreign liquor. The teetotallers enjoy their “lassi” and “sherbet” (a sweet syrupy drink).
